Recipe: Libby’s Famous Pumpkin Pie

Face it.  You just can’t celebrate Thanksgiving without indulging in a Pumpkin Pie.  In fact, even America’s pilgrims thought so when one early celebration was delayed pending the arrival of a supply ship carrying molasses, an essential ingredient for baking pies of the time.

After picturing Libby as the pumpkin pie equivalent to cake’s Sara Lee or breakfast’s Aunt Jemima, Libby is actually the surname of founding brothers.  Libby’s Pumpkin first graced grocery shelves in 1929 and was acquired by Nestle in 1971.  While other Libby’s canned products have been acquired by other companies, Nestle continues to own Libby’s Pumpkin.

Libby’s uses only the Dickinson pumpkin, known for its rich color, creamy texture and pure pumpkin flavor.  In fact, Libby’s has developed its own line of Dickinson after many years of agricultural research and plants nearly 4000 acres of pumpkin each year.

You’ve been able to find the famous recipe on the Libby’s label since 1950, and now you can find here. With this easy recipe, you can create at least one of the over 50 million pies baked every Thanksgiving.

Cooling time: 2 hrs cooling
Yields: 8 servings

Ingredients
3/4 cup granulated sugar
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/2 teaspoon ground ginger
1/4 teaspoon ground cloves
2 large eggs
1 can (15 oz.) LIBBY’S® 100% Pure Pumpkin
1 can (12 fl. oz.) NESTLÉ® CARNATION® Evaporated Milk
1 unbaked 9-inch (4-cup volume) deep-dish pie shell
Whipped cream (optional)


Directions

MIX sugar, cinnamon, salt, ginger and cloves in small bowl. Beat eggs in large bowl. Stir in pumpkin and sugar-spice mixture. Gradually stir in evaporated milk.

POUR into pie shell.

BAKE in preheated 425° F oven for 15 minutes. Reduce temperature to 350° F; bake for 40 to 50 minutes or until knife inserted near center comes out clean. Cool on wire rack for 2 hours. Serve immediately or refrigerate. Top with whipped cream before serving.

FYI:  There appears to be a pumpkin shortage this season which means fewer cans are available.  Buy early so that you don’t have to make like the pilgrims and delay Thanksgiving!
